Healthy Vegetable Lasagna

Ingredients:

1. 1 tablespoon olive oil 2. 1 medium onion, chopped 3. 3 garlic cloves, minced 4. 2 cups zucchini, diced 5. 2 cups mushrooms, sliced 6. 9 lasagna noodle 

7. 2 cups spinach, roughly chopped 8. 1 red bell pepper, diced 9. 1 yellow bell pepper, diced 10. 1 teaspoon dried oregano 11. 1 teaspoon dried basil 12. Salt and pepper, to taste

13. 3 cups marinara sauce  14. 1 ½ cups ricotta cheese  15. 1 egg 16. 2 cups shredded mozzarella cheese, divided 17. ½ cup grated Parmesan cheese 18. Fresh basil or parsley

Step 1: Cook the Lasagna Noodle Step 2: Sauté the Vegetable Step 3: Add the Veggie Step 4: Prepare the Ricotta Mixture
