Chicken Pesto Pasta Salad

Ingredients:

1. 12 oz pasta (bowtie, fusilli, or penne work great) 2. 2 cups cooked chicken, shredded or cubed 3. 1 cup cherry tomatoes, halved 4. 1/2 cup cucumber, diced

5. 1/4 cup red onion, thinly sliced 6. 1/4 cup black olives, sliced 7. 1/2 cup fresh mozzarella balls(optional) 8. 1/4 cup pine nuts, toasted 9. 1/4 cup grated Parmesan cheese

10. 1/2 cup homemade or store-bought pesto(recipe below for homemade) 11. Juice of 1 lemon 12. Salt and pepper, to taste 13. Fresh basil, for garnish

Step 1: Cook the Pasta Step 2: Prepare the Veggie Step 3: Cook or Shred the Chicken Step 4: Toast the Pine Nut
